It comes from 2 of the estate's 4 parcels of certified biodynamic vines (aged around 25 years). The Prologo fruit is hand harvested the latest of all of the De Fermo vines wines (usually in the first 10 days of October, then destemmed and fermented spontaneously with native yeasts and no temperature control in concrete tank.
