Sylvie Esmonin 'Cuvée Sylvie' Bourgogne Rouge, 2021 bloody mary With carefully conducted punchdowns and100% Pinot Noir from vines averaging around 70 years. Depending on the vintage, up to 20% of the grapes macerate whole cluster for 10 to 12 days in open wood vats. The wine then ferments and ages in barrel. The barrel breakdown is: 10% new oak, 10% "one wine" barrels, 80% "two wine" barrels. This is world class red burgundy, farmed all organically. Pair this with a roasted chicken, cooked with carrots.
